Garlic Roasted Potatoes

2 lbs potatoes (russet and sweet are a nice mix), rinsed and chopped (peel sweet if using)
1 onion, chopped
2 TBSP olive oil
1.5 tsp garlic salt
1/2 tsp pepper

Toss all ingredients together. Bake at 425 for 45 min, stirring half way through.
