2-4 TBSP melted butter
2-4 TBSP honey (or other sweetener like brown sugar or maple syrup)*
1 TBPS mustard**
1 tsp soy sauce
1/2 tsp ground ginger
1/4 tsp powdered onion
1/4 tsp powdered garlic
salt and pepper to taste
dried onions
slivered almonds or chopped pecans
mix sauce ingredients (butter through pepper) together. Pour into the bottom of a foil-lined pan. Sprinkle sauce with dried onion flakes and slivered almonds or chopped pecans. Wash and pat dry the salmon, place in sauce with skin-side up. shape foil around salmon, bake at 425 for 15-20 min. Removed from oven and turn off heat. Remove and discard salmon skin. Flip salmon and place back in oven for another 5 minutes.
Serve with mashed sweet potatoes.
*use equal parts butter and sweetener
**use half as much mustard or other tart flavor
Can be done ahead of time and allowed to marinate in the fridge. Be sure to wrap the salmon tightly before leaving in the fridge--it will make everything in the fridge smell fishy
