Whole Wheat Potato Bread

Tried a new recipe for sandwich bread after my kids requested bread more like Grandma Sycamore's brand. I noticed that brand has potato flakes as an ingredient, so I searched for the same thing and found this.  

Ingredients

3 TBSP yeast
1 TBSP sugar
1-1/4 cup warm water


8-9 cups whole wheat flour, divided
4 cups hot water
2 cups dehydrated potato flakes
1 cup honey
2 TBSP salt
1/2 cup oil
1 cup vital wheat gluten

Preparation
1. Dissolve yeast and sugar in warm water and set aside.
2. Add 4-5 cups whole wheat flour into mixer bowl, add hot water and mid to combine. Add salt, oil, honey, gluten and potato flakes. Mix to combine.
3. Add yeast mixture to flour mixture. Add remaining flour until dough pulls away from sides of the bowl.
4. Mix on high for 10 minutes.
5. Let rise in a warm oven (I put mine on "bread proof" setting) until doubles, 40-60 minutes.
6. Roll onto a lightly oiled surface and form into 7 loaves, placing in greased bread pans.
7. Return to oven and let rise to 1 inch above pan, this will take about 90 minutes. 
8. Bake at 325* for 30 minutes. (Note: original recipe baked at 375* for 30 minutes and bread was very dark brown on the top. Try 325 or 350 and 25-30 minutes, bake until internal temperature reads 185*.)
9. Remove from pans, butter tops of loaves. Enjoy!

Braised Greens

Braised Greens as shown on video from Jubilee Farm

 Finely chopped onion (and any hard greens, like chard stems), heat with olive oil until soft (20 min). Add garlic, nutmeg and chipotle powder. Heat until the smells "bloom"

Add greens, additional water if needed, cover and let steep for 5 min then start folding onions into greens. Cook another 10 min or so, so the greens are fully cooked. Can be kept in fridge up to 5 days.

Apple Bread

 This recipe came from Katie Perry, a friend in our first married ward, the BYU 1st Ward. 

3C flour
2 tsp cinnamon
1/2 tsp salt
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp nutmeg

Mix together and set aside. In a separate bowl, combine:

2C sugar
2C peeled, shredded apple
3/4C peeled, chopped apple
1/2C cooking oil
2 eggs

Add dry mixture to apple mixture. Stir till just moistened. Spoon batter into 2 greased loaf pans (batter will be thick). Bake at 350* for 55-60 min.

Chicken with Walnuts and Broccoli

 

Chicken with Walnuts and Broccoli

Sauce:
1 tsp white vinegar
2 Tbl soy sauce
1 tsp sugar
2 tsp corn starch
3 Tbl water

Mix and set aside.

2 chicken breasts, cut into 1/2 in. cubes or smaller
1 Tbl corn starch
1/2 tsp five spice powder
1/2 tsp salt
4-6 Tbl oil, divided
2 heads broccoli, cut into bite size pieces
1 C walnuts
1 1/2 tsp grated fresh ginger, or 1 tsp dry
1 clove minced garlic

Mix corn starch, salt, and five spice powder into chicken and set aside. Heat 2 Tbl oil on high in a wok or skillet. When nearly smoking, add broccoli and walnuts. Stir-fry for ~3 minutes, adding up to 2 Tbl oil if necessary (it gets absorbed). Set broccoli and walnuts aside.

Add 2 Tbl oil to skillet. Fry ginger and garlic for a few seconds, then add chicken and stir-fry for ~2 minutes until chicken has changed color (the pieces should be small enough that it will be nearly cooked through by this point). Add sauce, stir, and continue cooking until sauce is boiling and has started to thicken. Remove from heat. Stir in broccoli and walnuts. Serve over rice.

Fantasy Fudge

    • 3 cups sugar,

·         3/4 cup butter or margarine

·         2/3 cup evaporated milk

·         2 cups semi chocolate chips (I use Tollhouse for the original recipe)

    • 1  jar of marshmallow crème, Kraft jet puffed 7 oz. jar

    • 1 tsp. vanilla

    • Chopped nuts are optional

Directions

1.       Grease a 9 X 13 ” pan.  Alternative and much easier is to line a 9 X 13″ pan with parchment paper, this allows a much quicker release and clean up.

2.       In a medium pot, mix sugar, butter and milk.

3.       Bring the mixture to a full boil using medium heat, stirring constantly so the sugar dissolves and the mixture does not burn on the bottom of the pot. **

4.       Boil for five minutes. This is important! Five minutes exactly !!

5.       Remove the thickened mixture from the heat and add chocolate chips.

6.       Add the marshmallow crème and vanilla.

7.       Add nuts if desired.

8.       Pour into the prepared pan to cool.
