Easy Lasagna

1 lb ground beef or sausage
32 oz spaghetti sauce
1 and 1/2 cups water
15 oz cottage cheese (we like 4% small curd)
2 cups shredded mozzarella, divided
1/2 cup grated parmesan cheese (I use powdered from a can, since that's what I usually have on hand)
2 eggs
2 TBPS dried parsley
1/2 tsp salt
1/4 tsp pepper
9 lasagna noodles, uncooked

Brown meat and drain. Add spaghetti sauce and water and simmer about 10 minutes

In a large bowl, combine cottage, 1 cup of mozzarella and parmesan cheeses as well as eggs, parsley, salt and pepper.

Pour about 1/2 cup of sauce mixture into the bottom of a 9x13 pan. Layer 3 lasagna noodles (Run the noodles under water first). Layer 1/2 cups of sauce, then 1/2 of the cheese mixture and 3 more noodles. Repeat layers of noodles, sauce and cheese. Tops with one final layer of noodles, remaining sauce and 1 cup of mozzarella cheese.

Bake, covered in foil for 45 min at 350. Remove foil and bake additional 15 min uncovered. Let stand 10 min before serving to let it set. Makes 10-12 servings.
