Whole Wheat Potato Bread

Tried a new recipe for sandwich bread after my kids requested bread more like Grandma Sycamore's brand. I noticed that brand has potato flakes as an ingredient, so I searched for the same thing and found this.  

Ingredients

3 TBSP yeast
1 TBSP sugar
1-1/4 cup warm water


8-9 cups whole wheat flour, divided
4 cups hot water
2 cups dehydrated potato flakes
1 cup honey
2 TBSP salt
1/2 cup oil
1 cup vital wheat gluten

Preparation
1. Dissolve yeast and sugar in warm water and set aside.
2. Add 4-5 cups whole wheat flour into mixer bowl, add hot water and mid to combine. Add salt, oil, honey, gluten and potato flakes. Mix to combine.
3. Add yeast mixture to flour mixture. Add remaining flour until dough pulls away from sides of the bowl.
4. Mix on high for 10 minutes.
5. Let rise in a warm oven (I put mine on "bread proof" setting) until doubles, 40-60 minutes.
6. Roll onto a lightly oiled surface and form into 7 loaves, placing in greased bread pans.
7. Return to oven and let rise to 1 inch above pan, this will take about 90 minutes. 
8. Bake at 325* for 30 minutes. (Note: original recipe baked at 375* for 30 minutes and bread was very dark brown on the top. Try 325 or 350 and 25-30 minutes, bake until internal temperature reads 185*.)
9. Remove from pans, butter tops of loaves. Enjoy!

  1. If using potato pearls, try using 2 cups, not prepared, and add to the mixing bowl at the same time as the hot water.
