Fool-Proof Whole Wheat Bread

6 cup warm water
2 tbsp salt
1/2 cup veg. oil or 1/4 applesauce and 1/4 vegetable oil
2/3 cup honey
2 1/2 tbsp dough enhancer
2 tbsp gluten
2 1/2 tbsp instant rising yeast (I use SAF yeast)
Start with 8 1/2 cup flour (total 12-15 cups)
Combine water and 8-9 cup flour. Mix to paste consistency. Mix in yeast, then add salt, honey, oil, and gluten. Turn machine to speed 1. Add additional flour until dough pulls away from sides bowl. As motor bears down, increase to speed 2. Careful not to add too much flour!!! :) Knead 7-8 minutes. Add dough enhancer, then knead for two more minutes. Oil hands and form loaves. Spank loaves. Fill greased pans 2/3 full.
Bake in preheated oven at 350ºF for 30-35 minutes or until internal temperature is 180ºF
Tip: I like to add an extra tablespoon of applesauce to make my bread more moist. Also, you know your bread has raised long enough if you can make an indentation with you finger into the dough, and the indentation remains.
