Fruity Pork Chops

4 pork lion chops, excess fat removed
1 TBSP olive oil
salt and pepper

for the fresh fruit salsa
1/4 cup raisins
1 crisp apple, finely chopped
1 orange, peeled and finely chopped
2 TBSP brown sugar
1 TBSP apple cider vinegar

First make the fruit salsa: soak the raisins in boiling water for 10 minutes, drain and mix with the remaining ingredients. Chill

Heat the oil in a pan over high heat for about 10 minutes. Reduce heat to medium, place chops on pan, season with salt and pepper, and cook for 5 minutes on each side, or until juices run clear when meat is cut. Serve with salsa.
