A fast easy way to make lots of versatile chicken.
1 cup salsa
1 large chicken breast
1 can whole kernel corn, undrained
beans cooked (white of some sort is best)
Can be cooked in either a pressure cooker or crock pot. Choose baking dish, add all ingredients and cook. If using crock pot, 4-6 hours on low. If pressure cooker, 25-30 min on high heat with natural pressure release.
Before serving, shred chicken with a fork. Serve in tortillas with rice, cheese, and peppers or in a bowl with chips and cheese.
*We sometimes make this using only chicken and salsa. It is still delicious.
