Stir-fry

8 oz egg noodles (I usually use spaghetti)
3 Tbps oil
one bunch of green onions
1 inch of fresh ginger
4 med carrots, cut into sticks
2 medium bell peppers, cored and cut into sticks
3/4 lb chicken breast, cut into slices
2 Tbsp grape or apple juice
4 Tbsp soy sauce

Cook noodles separately.

Heat oil in pan. When oil begins to smoke, onions and ginger. Cook 1-2 min, then add carrots and peppers, cook 1-2 min. Add chicken a little at a time. Cook for 1-2 min. Pour juice and soy sauce.

Drain noodles and add to vegetables and chicken. Serve immediately.
