Granola

10 cups oats
1 cup honey
1 cup coconut oil
2 tsp vanilla
2 tsp cinnamon
2 cups coconut
2 cups nuts (I usually use walnuts, but almonds and pecans, or a mixture of any work great too)

Cook in a crock pot on low with lid tilted. Stir about every 20 min until brown.

I usually cook mine for about 3 hours and set the time on my watch to beep every 20 min so I remember to stir it, other wise it burns.
