We make these almost every Sunday. We eat them daily in our lunches. Before we had kids, this would be our Sunday dinner many weeks. Jefferson grinds the flour by hand.
1 cup brown sugar
1/2 cup white sugar
3/4 cup butter (we usually use a blend of butter and coconut oil. Sometimes all of one or all of the other)
1 tsp baking powder
1/4 tsp baking soda
1/2 tsp cinnamon
1/4 tsp cloves dash of salt
1 tsp vanilla (Jefferson "eyeballs" it)
2 eggs
2 cups oats
1-3/4 cups flour (whole wheat)
2 cups chocolate chips
Combine sugars and butter till whipped. add spices, mix again till combined. Add eggs and mix. Add flour and oats, mix again. Add chips. Drop onto greased* cookie sheets, bake at 375 for 11 min.
*we use parchment paper
**We store these frozen and pull out the ones we need daily.
