Chicken Tikka Masala

Chicken Tikka Masala

Rice
  • 2 C Basmati rice
  • 4 Tbl Butter
  • 1 tsp Salt
  • 1 Tbl Turmeric
  • Optional - frozen peas
Cook rice and seasonings in rice cooker. Stir in frozen peas when done.

Chicken Tikka Masala
  • 2 Chicken breasts, cut up 
    • or 1 chicken breast and  1 can (1 C dry) chickpeas, cooked and drained
  • 4 Tbl Butter
  • 1 Onion, chopped
  • 4 Cloves Garlic or 1 Tbl minced garlic
  • 2 inches fresh ginger piece, grated, or 1 Tbl ground ginger
  • 3 Tbl Garam Masala
  • 1 Tbl Salt
  • 1 Tbl Sugar
  • Optional - 1 Tbl dried cilantro
  • Optional - jalapeno pepper (chopped) or cayenne to taste (1/8 tsp)
  • 1 large can (28 oz) diced tomatoes
  • 2 C Heavy cream or 1 can coconut milk
Sauté chicken in butter until cooked through. Add onion and cook ~5 minutes. Add seasonings and cook another 1-2 minutes. Stir in tomatoes and turn heat down to medium. Simmer for at least 5 minutes, longer if you have time. Stir in heavy cream or coconut milk.
