Kale and Sausage Soup

- 1 Kielbasa-type sausage, chopped into small pieces
- 1 onion, chopped
- 2 stalks celery, chopped
- 3 cloves garlic, minced
- 2 carrots, chopped
- 2 potatoes, chopped
- 5 cups broth
- 1 bunch kale, chopped
- 1 can white beans (or about 3/4 C of dry beans, cooked)
Saute the sausage in oil until starting to brown. Remove and set aside. Saute onion and celery in oil 5 minutes. Add garlic and saute for 2 more minutes. Add carrots, potatoes, and broth. Bring to a boil, cover, and simmer for 15 minutes. Add kale, white beans, and sausage, and simmer for 10 more minutes.
