Banana Muffins

This recipe came from a Stake Relief Society Conference from our married ward at BYU, the BYU 1st Ward back in 2005-2006. The full title is "Count your Blessings Banana Muffins." When you buy bananas, you don't necessarily plan to use them for baking. But sometimes things don't go the way you plan and they ripen too fast or are partly rotten. In cases like that, you can still make something good from a situation you may not have planned on (when things don't go the way you thought they would, or thought they should). Count your blessings and you will be singing as the days go by.

2-1/2 cups flour
1 tsp. baking powder
1 tsp. baking soda
1 cup sugar

3-5 mashed bananas
1 tsp vanilla
1/2 cup melted butter
2 eggs
1 cups nuts (optional)

Mix dry ingredients together. Add wet ingredients and mix. Batter will be thick. Bake at 350* for about 20 min. Makes 14-16 muffins*

*I followed this recipe and yielded 24 small muffins and 14 large muffins. The cups were not totally full, but when baked the muffins were taller than the paper lining

You can collect over-ripe bananas in the fridge until ready to use.
