We make this cake for birthdays for the kids. So far, that's been 4 times between both kids. It is on the back of the Hershey's cocoa box.
2 c. sugar
1-3/4 c flour
3/4 cup cocoa
1-1/2 tsp baking powder
1-1/2 tsp baking soda
1 tsp salt
2 eggs
1 c milk
1/2 cup oil (we use coconut oil)
2 tsp vanilla
1 c boiling water
heat oven to 350*. grease and flour 2-9 in round cake pans.
combine dry ingredients. add eggs, milk, oil and vanilla. mix on med speed 2 min. stir in water, batter will be thin. pour into pans, back 30-35 min until tooth pick comes out clean. cool 10 min, transfer to wire racks. cool completely before frosting.
chocolate frosting
1/2 c butter
2/3 c cocoa
3 c powdered sugar
1/3 c milk
1 tsp vanilla
melt butter. stir in cocoa. Alternately add sugar and milk, beating on med speed to spreading consistency. Add more milk if needed. Stir in vanilla. about 2 c. frosting.
